Easy Semolina cake (Guilt free)

Winters have hit Delhi and it has been gloomy and sunless most of this week. This weather really brings down my mood. So I decided to do something which elevates my mood and keeps my mind occupied..baking. Yes I am a sucker when it comes to baking. Its not been long since Diwali went and I have been avoiding making any Dessert due to the overdose of sweets we had had on Diwali. But since this Semolina cake uses no butter/oil I decided to calm down my “baking itch” by making this :-). I used very small portions as I didn’t want wastage lest this try came out bad. The result was a small cake which could serve 3 people for a time, depending how big your sweet tooth is 🙂

Ingredients:
1/2 cup Semolina
1/2 cup Sugar
1/2 cup Curd
1 tbsp butter at room temperature (optional)
1 tsp Vanilla essence
1/2 tsp Baking powder
8-10 Almonds, peeled and slivered


Method:
Mix together Semolina and Baking powder.
Add sugar into curd and beat well till the sugar dissolves. Add butter to this and beat again. Now add the Semolina and Baking powder mix to this curd mixture and beat again.

(I didn’t have unsalted butter. So I put Salted butter and added 1 additional tsp of Sugar)

Pre heat the oven to 150C. (I use microwave convection oven. Please vary the temperature as per your oven type)
Grease a baking tin and pour this mixture into it. I used a 10 inch long loaf tin.
Bake it for 30 min or until golden brown. Let the cake rest in oven for 5-7 min.

Since it is a semolina cake, the outer corners of this cake become a little crisp when it cools down. Hence I would suggest to cut it while its still warm to avoid too much breakage.

Enjoy the low fat Dessert!

This was my trial version. Next time I would try by adding almonds in the batter as well to get more almonds in the byte.
