Broccoli And Spinach Saag

[dropcap]I[/dropcap]ts amazing how people come up with beautiful alternatives to dishes as per the availability in their country, city. When I was in London and heard Saag is on the menu, I thought “How come? Sarson Ka Saag in London?” Then I came to know that its rather a saag of Spinacn, Broccoli and Brussels Sprouts and it tasted equally fabulous. I don’t get Brussels sprouts in Delhi so had to omit it. But this came out well without the sprouts too. So those in India can enjoy it with just these two ingredients or even add cabbage to it.

Ingredients:

400 gums of spinach
1 large broccoli floret
1-2 garlic pod -peeled
2 tbsp maize flour/cornmeal (makki ka atta)
(You can add Brussels Sprouts too)
salt to taste
For tempering:
a pinch of asafetida powder
1 tsp chopped garlic
1 large onion – chopped
6 tbsp tomato puree
1 tbsp ginger paste
salt to taste
1-2 tbsp clarified butter (ghee)

Method:

  • Cut broccoli into 2-4 large pieces. Boil with a little amount of water. Mash with the back of a ladle. Set aside. (I used the stem too by peeling off the outer skin and using the inner soft part)
  • Boil spinach along with 1or 2 garlic pods and salt. Make a puree with a blender.
  • For tempering heat ghee in a wok. Add Asafoetida. Add chopped garlic, saute. Add ginger paste. Add chopped onion and saute till they become translucent. Add tomato puree. Cook for 2 minutes till ghee separates.
  • Now add spinach puree and mashed broccoli. Add maize flour. Adjust salt if needed. Cook covered for 15-20 minutes and stir in between. Serve hot with chapatis. Drizzle some white butter or ghee on top (purely optional :-))
