Grilled Eggplant Sandwich with Hung Yoghurt Garlic and Basil Spread

[dropcap]E[/dropcap] ating out does not only give a good break from the kitchen chores but also ideas for new recipes to be tried at home. This sandwich is a combination of few things I liked while on a cooking break. Hope you might like it too. Recipe for Yoghurt spread is adapted from here. I loved her tip about keeping hung yoghurt in fridge.

I have followed the recipe from one of my previous posts here and grilled the eggplant instead of baking it. You can keep it a little slushy or grill till crisp as per your preference.

Ingredients:

1 big eggplant –

For Yoghurt Spread
400 gms of Yoghurt
2 garlic pods – crushed
salt to taste
2 tbs of extra virgin olive oil
fresh ground pepper to taste
7-8 basil leaves – finely chopped

Method:
  • Pour yoghurt into a sieve with a fine mesh or lined with a muslin cloth. Place it on a bowl. Keep this is fridge for at least 7-8 hours.
  • Mix the crushed garlic in olive oil well. Mix this with yoghurt.
  • Add salt, pepper and basil leaves and mix. Chill in fridge till use.
  • Apply this spread generously on the bread slices.
  • Layer the grilled eggplants on one side. Cover it with the other slice and enjoy the sandwich!

I have photographed the sandwich with tomato but found tomatoes were overshadowing the taste of eggplants a bit. I personally like it better without tomatoes but you can add more eggplant slices with tomatoes and try it out. I think hash brown potatoes might also go good with this. I’ll also recommend to use the yoghurt mixture within a day or two.
