Spiced Barley Bites

 Weather is torturous yet the oven beckons. Lures me to bake recipes yet untried. Activates my imagination. I start to see my folks munching on the baked goodies. Their mouths full of food and eyes full of appreciation. And then…..I fall into the trap. As I gather the ingredients and get started, the preheating oven reminds me of the heat. The sweat that has started to pour, the nap that I have foregone. And then I shift my focus back to the thrill of baking, of creating home baked goodies, for the ones I love and all discomforts just fade away.

Following the recipe from IndianKhanna. Just did some teeny weeny modifications. The end result was a bunch of highly addictive savory barley cookies which go very well with a hot cup of tea. Enjoy!

1/2 cup Barley Flour (Jaun ka atta)
1/2 cup whole wheat flour
3-5 tbsp yoghurt
1/8 tsp baking powder
1/4 cup canola oil
1 tbsp dried fenugreek leaves (kasoori methi)
3/4 tsp carom seeds (Ajwain)
1 tsp sugar or 3/4 tsp powdered sugar
1/4 tsp red chilli powder
1/2 tsp coriander powder
1 tsp garam masala
salt to taste ( I put a little less than 1 tsp)


  • Mix sugar with oil till it dissolves.
  • Pre heat the oven at 160C (Or the usual cookie temperature that you use)
  • Sieve together whole wheat flour, barley flour, baking powder, coriander powder, read chill powder, garam masala and salt. ( I added a little bran from the sieved barley flour after sieving. Add carom seeds.
  • Dry roast kasoori methi for a few seconds. Switch off the flame. Let it cool. Now take them between your palms and crush them and let it pour into the flour.
  • Add the oil and sugar mix to the flour. Mix it with hands till the flour resembles bread crumbs.
  • Now add yoghurt little by little and bring the dough together to form a firm yet pliable dough. Do not over knead. Add only as much yoghurt as needed to form a dough as we do not want an soft roti like dough.
  • Roll out the dough such that it is about 1/8 inches thick. Don’t worry if you see little cracks on the dough. Cut into cookies of desired shape. Arrange them on a lines cookie tray. Bake for 20-30 minutes or till they are a little browned. Take them out of oven and cool on a wire rack.
  • Store in an airtight container. Enjoy them with tea or just pop them into your mouth on every trip to the kitchen 😉
