Nutella Cornflakes Muesli and Choc Chips Easy Cookies

If I could ever make fun of myself it is this moment. I am smiling at the loong title I have given to the post, but could not help mentioning all the fab ingredients :-))ย I was flipping through the pages of Good Housekeepingย few days back and came across some beautiful looking cornflakes cookies recipe. Since those had eggs I did not have much energy to think about replacements and do stuff. Nor did I have the energy for mixing butter and sugar thing. But I was way too keen to do the cornflakes cookies somehow. The tempting photograph was making me restless. So I got my way out by making these easiest Nutella Cornflakes, Muesli and Choco Chips cookies (As greedy as I could get :-)). Hubby came back from office and saw these chocolaty dark cookies staring at him ๐Ÿ™‚ He took a small piece to taste and couldn’t stop his hands then. I had to literally snatch these from him lest these became his dinner instead :-). Here is the recipe:

Serves: 10

Cooking Time: 30 Mins

Ingredients:

3/4 Cup Cornflakes (I had honey ones)
1/2 cup Muesli (I had the one with fruits and nuts)
5 tsp Nutella, generous
4-6 tbsp cold Milk
2 tbsp All Purpose Flour

Method:

Preheat the oven at 160C.

Put cornflakes and muesli in a zip lock bag and close. Crush them by running a roller pin over them. (Do not powder in a mixer).

Put these into a mixing bowl. Sift the all purpose flour into it. Add 4-5 tbsp milk to moisten the mix. Mix with a spoon.

Now add 5 tsp of generous free flowing Nutella. Mix well with a spoon. This would be a sticky mixture. So use two spoons to handle it. Take the mixture between two spoons and see if it is coming together. Else add little more milk (or nutella :-))

Grab some mixture between two spoons and drop the ball into a lined cookie tray. I used a scooper into which I compressed the mixture and then dropped it into the tray. Bake for 12-15 minutes.

Take the tray out and let the cookies cool in it till they can be lifted without breaking. Cool and store them in an airtight container.
