Beetroot Ginger Tempered Salad

Here’s a quickie 😉 My MIL is averse to the natural sweetness of Beetroot and never touches them. This time I pepped it up with ginger and it tasted awesome. After all now its revenge time, to make our parents gobble up the healthy stuff 😀 Though I call it a salad I would anyway double it up as a side dish or a sandwich filling. Beetroot as a sandwich filling? Hmmm, never done it so far. Now that I have blurted it out while typing doesn’t sound like a bad idea to try 🙂

Serves: 4

Cooking Time: 10 Mins

Ingredients:

3 Beetroot, peeled and shredded
1-2 tbsp Ginger, julienned (I used 2)
1-2 dry whole Red Chilli
Salt to taste
Rock Salt to taste
Curry leaves 6-8
Juice of 1 lemon
Mustard seeds 1 tsp
Black gram husked (Urad Dal) 1 tsp
Coriander/Cilantro leaves to garnish
1 tbsp oil

Method:

  • In a bowl mix together shredded Beetroot, Ginger, Salt, Rock salt and Lemon juice.
  • Heat oil in a wok. Add mustard seeds. When they start to splutter reduce the heat to minimum and let the mustard seeds burn a little. Add black gram dal and sautĂ© till the turn pinkish. Add the Red chillies. Add curry leaves.
  • Add the prepared Beetroot mixture and sautĂ© for a few seconds  till the mixture starts to shrivel. Turn off the heat. Cover the wok and let the mixture cool down. Garnish with cilantro
  • Keep it in the fridge and serve chilled.
