Apple Semolina Halwa | Seb Sooji ka Halwa

I am happy that my aversion to apples lead to this halwa. This is fruity flavor halwa, sweet with a tinge of sourness, that comes from apples. And it takes little amount of ghee. So it is a win win dessert for me. I assume kids would like it very much and would love to hear feedback from people who try this  serve to their lil ones.

Cooking Time: 30 Mins

Ingredients:

1 and 1/2 cup shredded Apples (from 6-7 medium sized apples)
2 – 6 tbsp Sugar (depending on sweetness of apples)
1 tbsp Ghee

1/2 cup Semolina
a little less than 1/2 cup Sugar
2 cups of water
1/2 tsp Cardamom Powder
a pinch of Saffron
2-4 tbsp Ghee
Sliced Almonds for garnishing

Method:

  • Heat a tsp of water. Add saffron.
  • Peel and grate apples. Taste a little bit to check how sweet the apples are.
  • Heat a wide thick bottomed wok. Add a tbsp of ghee. Add the grated apples and cook open on low flame for a few minutes. Add  sugar as per the sweetness of apples. If they are already very sweet just add about 2 tbsp. Cook open for about 15 minutes on low  heat, stirring in between, till the apple comes together as a lump.
  • Simultaneously heat another smaller wok or thick bottomed pan. Add 2 tbsp ghee. Add semolina. Roast on very low heat for 15-25 minutes till semolina turns into light brown color. Keep stirring in between.
  • Meanwhile heat 2 cups of water and bring to a boil. Add sugar (a little less than 1/2 cup or 1/2 cup if you want it sweeter). Add cardamom powder.
  • Add the roasted semolina to apples and mix. Add boiling water and sugar syrup. Add saffron syrup. Cook on high heat and keep mixing to avoid lumps. Cook till the mixture starts to come together and leave sides of the wok. Turn off the heat.
  • Garnish with roasted or raw sliced almonds. You add roasted cashews as well. Serve hot!

I prefer the dominating taste of apples in this halwa hence kept less of semolina. You can vary the ratio as per your preference.

  3. This is such an innovative style of making halwa with apples! I try a lot of desserts with apples but never thought of something like this…why gosh!! Just because you could do that sweetly for me!! 🙂
