Kashmiri Palak Paneer

My mom-in-law saw this recipe on TV (probably on Marut Sikka’s show) and makes this quiet often now. This is a great variation of Palak Paneer which we had never tasted anywhere earlier. She has made them today and I thought it would be a good one to share.

Ingredients:
Spices –
2 Black Cardamom and 4 Green Cardamon – powdered
1/2 tsp Degi Mirch (Red Chili Powder)
1 tsp Cumin seeds
One 2″ Cinnamon stick
1 tsp Dry Ginger powder
Salt to taste

500 gm Spinach
200 gm Paneer (Cottage Cheese)
Cooking Oil

Method:

  • Wash the spinach leaves and drain excess water. Chop them coarsely.
  • Cut Paneer into rectangular pieces. Deep fry them till sides are golden brown. Soak them in hot water. This makes the Paneer pieces to leave oil, expand and become soft.
  • In a wok heat Oil. Add the spices.
  • Now add chopped Spinach leaves. Saute. Cover and cook for 4-5 minutes. Add drained Paneer pieces, mix well and cover and cook for 5-7 minutes so that flavours get soaked in Paneer.
  • Serve hot with Rotis.
