Gajar Sooji Halwa (Carrot Semolina Halwa)
Another delicacy from the Master Chef of my house..my mom-in-law. In my household, Carrot halwa garners mixed reaction, Semolina halwa garners mixed reaction but when the two are combined it becomes something else and gets a super “like” from everyone π Don’t take my word for it. Just try it to know the taste π
Serving: 8-10 people
Ingredients:
1 Cup Β Semolina (Sooji)
1 Cup Sugar
4 Cup Water
3/4 Cup Clarified butter (Ghee)
1 tsp Cardamom powder
1/2 Cup grated Carrots
1/4 cup Sugar
2 tbsp Raisins
2 tbsp Cashenuts – Slit vertically
Method:
- Roast Cashews in 1 tsp ghee and set aside.
- Heat a wok or heavy bottomed vessel. Add Carrots and 1/4 cup Sugar. Cook, uncovered, in low heat for about 20 minutes.
- Heat a wok. Add ghee. Add Semolina. Roast in low heat for some 30 minutes till Semolina is brown and it releases the ghee. Mean while prepare the Sugar syrup.
- Boil Water. Add Sugar and Cardamom powder. Stir in between dissolve sugar.
- Now add cooked Carrots to Semolina and cook for another 5 minutes for the flavours to blend.
- Now add the boiling Sugar syrup. Add Raisins. Turn up the heat and keep stirring till the Halwa is a little thinner than the desired consistency. Turn off the heat. The Halwa will tend to thicken a bit as it cools down a bit.
- Garnish with roasted Cashews and serve hot!
